Spice Levels in Pakistani Food, Explained for Every Palate

One of the most common questions we get from first-time customers โ€” especially those newer to Pakistani cuisine or ordering for guests with varying spice tolerance โ€” is simply: how spicy is this going to be? The honest answer is that it varies enormously by dish, and understanding the general pattern helps you order with confidence instead of guessing.

The General Spectrum

Pakistani cooking rarely relies on raw chilli heat alone. Most of what reads as 'spicy' is actually a combination of warming spices โ€” cumin, coriander, garam masala โ€” layered with a moderate amount of chilli, rather than chilli-forward heat for its own sake. That said, some dishes are built specifically to be fiery, while others are deliberately mild and creamy.

  • Mild โ€” Malai Boti, White Karahi, Murgh Chane, most burger and pizza options. Built around cream, cheese, or mild spice blends with little to no raw chilli heat.
  • Medium โ€” Chicken Tikka, standard Chicken Karahi, Biryani, most shawarma options. Noticeable warmth from spice blends, moderate chilli, approachable for most palates.
  • Hot โ€” Achari Karahi, Seekh Kabab (depending on the batch), Special Hatkori preparations. Built with more raw green chilli and tangier, sharper spice profiles.
  • Very Hot โ€” dishes made on request with extra chilli. Most kitchens, ours included, can adjust heat level if you ask when ordering.

How to Order for Mixed Groups

If you're ordering for a group with different tolerances, the safest approach is to order one or two milder dishes (Malai Boti, White Karahi) as a base everyone can eat comfortably, alongside one or two spicier options (Achari Karahi, regular Tikka) for those who want more heat. This lets people build their own plate rather than forcing everyone to eat the same spice level.

It's also worth noting: yoghurt-based raita is the fastest, most effective way to cool your mouth down after a spicy bite โ€” far more effective than water, which actually spreads capsaicin around rather than neutralising it.
