Charcoal vs. Gas Grilling — Does It Actually Matter for Taste?

'Charcoal grilled' shows up on menus as a quality signal, but it's fair to ask: does it actually change the food in a meaningful way, or is it just marketing language? The honest answer is that it does make a real, measurable difference — for specific, explainable reasons.

What Charcoal Does Differently

Charcoal burns hotter than most home gas setups and produces genuine infrared radiant heat, which sears meat more effectively and locks in juices faster than the more even, lower-intensity heat of gas. This is part of why charcoal-grilled meat often has a more pronounced char and crust.

The bigger factor is smoke. As fat drips from the meat onto hot charcoal, it vaporises and rises back up, depositing genuine smoke flavour compounds onto the meat's surface. Gas grills, especially cleaner-burning ones, don't produce this same effect — the flavour difference between the two methods is real and detectable, not purely psychological.

The Trade-off

Charcoal is harder to control consistently and takes longer to prepare (the coals need time to reach the right temperature), which is exactly why many high-volume operations default to gas — it's faster and more predictable. Charcoal requires more skill and patience, which is part of why it's genuinely worth seeking out.
