Few dishes are as distinctly Lahori as the paratha roll. Part sandwich, part wrap, entirely its own thing, the paratha roll takes a freshly cooked layered paratha, fills it with a grilled or fried protein, adds chutney and salad, and rolls the whole thing tight enough to eat one-handed while walking, driving, or standing at a food stall counter.
Its exact origin is debated, but most food historians place its rise to popularity in Lahore's inner-city food streets sometime in the last few decades, growing out of the broader South Asian tradition of wrapping kababs and grilled meats in flatbread for portability.
What Makes the Paratha the Star
Unlike a naan or pita, a proper paratha is layered — folded and rolled with ghee or oil between the layers before being cooked on a hot griddle (tawa). This creates a flaky, slightly crisp exterior with soft, pliable layers underneath, which is what gives a paratha roll its distinctive texture: crunch on the outside, softness on the inside, capable of holding a generous filling without tearing.
A paratha that is too thick becomes doughy and overwhelms the filling. One that is too thin tears the moment you try to roll it. Getting the thickness and cook time right — enough char for flavour, enough structure to hold together — is a skill that takes real practice.
