Bong Paye — The King of Lahori Breakfast
Bong Paye — slow-cooked cow trotters (paye) and leg bones (bong) — is the most iconic Lahori breakfast dish. It is cooked overnight or for many hours at low heat until the collagen from the bones dissolves into the broth, creating a thick, unctuous soup with a deeply savoury, slightly gelatinous consistency.
The spicing is simpler than you might expect: whole garam masala, ginger, garlic, and salt. The flavour comes entirely from the long cook and the collagen-rich ingredients themselves. It is served with fresh ginger, green chillies, lemon, and roghni naan or kulcha for dunking.
Bong Paye is a cold-weather favourite but eaten year-round by those who love it. At YUM PUM, we offer it in Half and Full portions, cooked fresh every morning. Our version is made with large, meaty trotters and a broth that is clear but intensely flavoured — not muddied with extra oil or thickeners.
Murgh Chane — A More Accessible Classic
For those who want something less intense than Bong Paye, Murgh Chane is the perfect Lahori breakfast. Chickpeas (chane) are slow-cooked in a spiced masala, then topped with pieces of whole chicken that have been braised until tender. The dish has a wonderful interplay of textures: the soft chickpeas absorb the masala while the chicken pieces provide something to pull apart.
Murgh Chane is typically eaten with naan or a plain kulcha. A good version should have a dark, deeply flavoured masala — not bright red or thin, but a rich brown colour from properly cooked spices and the natural sweetness of slow-cooked onion.
We offer Murgh Chane in Half and Full portions. The Full portion is an excellent sharing option for two people as a light-ish morning meal alongside our Chai.
Chai — Non-Negotiable
No Pakistani breakfast is complete without chai. Our chai is made the traditional doodh patti way: black tea leaves simmered directly in full-fat milk without water, sweetened to order. The result is thick, creamy, and intensely tea-flavoured — nothing like the watery brew that gets passed off as tea in many places.
We serve chai in individual cups or a pot for sharing. It pairs with every item on our nashta menu and is available throughout our operating hours, from 5 AM to 3 AM.
Pairing Your Nashta
The classic Lahori nashta combination is Bong Paye plus a Roghni Naan plus a cup of Chai. For a lighter meal, Murgh Chane with a Sada Naan and Chai is the recommended combination. If you are ordering for a group, add both Bong Paye and Murgh Chane and let people mix and match.
