Biryani is the great equaliser of Pakistani food โ eaten at weddings and weekday lunches alike, beloved across every income level and every city. Lahore has its own version: fragrant with kewra and mace, heavy on the whole spices, and almost always accompanied by raita and a shami kabab. It is different from Karachi biryani (spicier, brighter), from Hyderabadi (more saffron, dum-cooked), and from the Mughal-style biryani of Delhi. Lahori biryani has its own personality.
Ordering it online adds a layer of complexity. Biryani is a dish that can deteriorate quickly if handled wrong after cooking. The rice can turn mushy, the masala can separate, and the container can trap steam that waterloggs the whole thing. Knowing what to look for โ and how to handle your order when it arrives โ makes all the difference.
What Makes a Good Delivery Biryani
The first thing to check is the rice grain. Good biryani uses long-grain aged Basmati that holds its shape even after cooking. Each grain should be separate โ not clumped, not broken. If the biryani arrives as a solid mass, the rice was either over-cooked before packing or the container trapped too much steam.
The second thing is the masala-to-rice ratio. A biryani with too little masala is just spiced rice. A biryani where the masala is so thick it sits on top like a curry is also wrong. The masala should be distributed through the biryani, coating the grains and the chicken pieces evenly, not pooled at the bottom.
- Grain integrity โ each rice grain should be long, separate, and slightly firm in the centre.
- Aromatics โ whole spices (bay leaves, cardamom, cloves, star anise) should be visible, not just powdered spice.
- Chicken quality โ bone-in pieces are traditional and deliver more flavour. Boneless is faster but loses something.
- Raita โ biryani without raita is incomplete. It should be cool, slightly sour, and thick enough to cling to the rice.

How to Reheat Biryani Properly
If your biryani has cooled by the time you eat it โ or if you have leftovers โ the best way to reheat it is in a pan. Add a tablespoon of water to the pan, spread the biryani evenly, cover with a lid, and heat on low for 3โ4 minutes. The steam revives the rice and loosens the masala without drying anything out. Microwave reheating works but can make the edges dry; if you use a microwave, cover the bowl with a damp paper towel and heat in 45-second bursts.
Never add more oil or butter when reheating biryani โ there is already plenty of fat in the masala and adding more will make it greasy.
